こちらは宇都宮市にある「宇都宮酒造」です。
This is the "Utsunomiya Sake Factory" in Utsunomiya city.
湯気のなかから見えるのは、炊き上がった新米です。
What you can see in the steam is the freshly cooked rice.
日本酒造りは気温が下がる冬場に適していて、温度と水分に気を配りながらの作業となります。
Sake is suitable for winter when the temperature is low, and attention should be paid to temperature and humidity.
例年だと、杜氏が伝統の歌に合わせてリズムよく「かい入れ」と呼ばれる作業を行います。
Every year, the brewer will perform a job called "Kaiire" in rhythm matching traditional songs.
しかし、今年は新型コロナウイルス感染予防のために歌は歌わず、心で念じたということです。
But this year, the brewer didn't sing to prevent the corona virus from spreading, and thought with all his heart.
仕込まれたお酒は約1カ月後に出荷されます。
The prepared sake will be released after about 1 month.
