団体は、施設の経営を圧迫しているとして、国に支援の拡充を求めていくことにしています。

施設の食費支出 平均367万8000円に
全国の高齢者施設や在宅介護の事業者などで作る10の団体は、所属する会員を対象に、賃上げや物価高騰などに関する調査を行い、1万1200余りの事業所からの回答結果を8日公表しました。

国は入所者1人当たりの1日の食費を1445円と設定して低所得者を対象に肩代わりし、施設には物価高を受けた緊急の支援も行っています。

ただ調査を行った団体は支援は十分ではない上、食費の肩代わりを受ける入所者には制度上、負担を求めることができないため、食費の増加が施設の経営を圧迫しているとしています。
However, the organization that conducted the survey says that the support is not sufficient, and since the system does not allow them to ask residents whose food expenses are covered to shoulder the cost, the rising food expenses are putting pressure on the management of the facilities.
このため職員の賃上げが十分にできず、人材が流出しているなどとして国に支援の拡充を求めていくことにしています。

調査をとりまとめた全国老人保健施設協会の東憲太郎会長は「毎日3食を提供している特別養護老人ホームは特に食費の高騰が経営に深刻な影響を与えている。

高齢者施設の食事は自前の調理施設で作るか外部の業者に委託して配送してもらうなどして提供されています。

こうした状況をなんとかしようと、施設では去年の秋から米をブレンド米に変え、肉料理を減らし、卵や豆の料理を増やしました。

山形県天童市の特別養護老人ホームは、入所する高齢者29人の1日3食の食事の調理を「セントラルキッチン」と呼ばれる外部の業者の調理施設に委託し、自前の調理場で温めるなどして提供しています。
